Chocolate Chunk Cookies

Seeing as I'm a great lover of chocolate, I wanted to give some cookies ago. With the help of my two friends, Caz and Sam, I managed to cook up this little mixture!

Chocolate Chunk Cookies - makes 12

115g softened butter
125g caster sugar
125g soft light brown sugar
2 eggs
1 teaspoon vanilla extract
280g plain flour
1 teaspoon bicarbonate of soda
300g milk chocolate

1. Preheat the oven to 180°C
2. Line large baking trays with greaseproof paper
3. Place the butter, caster sugar and soft light brown sugar in a bowl and whisk together until pale and creamy
4. Then whisk the eggs and vanilla extract into the mixture until smooth
5. Sift in the flour and bicarbonate of soda and beat together until well mixed
6. Break up the chocolate and mix into the mixture
7. Drop 12 large spoonfuls of the mixture onto the baking sheets, spacing them well apart
8. Bake in the preheated oven for about 15 minutes (should be a golden brown colour)
9. Leave to cool on the baking tray for 3 minutes and then move to a wire rack and leave to cool completely
10. Enjoy!
