Coffee Cupcakes

For this week's recipe, I roped in my good friend Sam and decided to make something coffee flavoured.

We decided to make some cute little cupcakes this week, they look good, and they taste good. The whole experience is an all round 10/10 (presuming you like coffee). Here's how we made ours:

Coffee Cupcakes - makes 24
175g butter (softened)
175g caster sugar
3 eggs
175g self-raising flour
2 teaspoons coffee powder (mixed with a little warm water)
75g butter
175g icing sugar
2 teaspoons coffee powder (mixed with a little warm water)

1. Preheat the oven to 190°
2. Line two 12-section bun trays with paper cupcake cases
3. Beat the butter and sugar together until pale and fluffy
4. Add the eggs, a little at a time, beating well after each addition 
5. Add the coffee to the mixture and mix well
6. Fold in half of the flour using a metal spoon, then fold in the rest
7. Divide the mixture evenly between the cupcake cases and put in the oven to bake for approximately 12-15 minutes
8. While the cakes are in the oven, put the butter into a bowl and cream until soft
9. Gradually beat in the icing sugar 
10. Add the coffee to the icing and mix throughly
11. When the cakes are out the oven and have cooled, pipe or spread the icing on top
